Homemade Fortune Cookies

Ingredients

  • 2 egg whites
  • ¼ tsp vanilla extract
  • ¼ cup flour
  • ¼ cup sugar
  • tsp salt
  • ½ cup chocolate chips optional
  • Sprinkles to decorate (optional)

Instructions

  1. Print or write your own fortunes on pieces of paper. Each piece should measure about ½ x 2.75 inches. Set aside.
  2. Preheat the oven to 400°F. Line a baking sheet with parchment paper and spray with non-stick spray. Set aside.
  3. In a medium bowl, whisk together the egg whites and vanilla extract until frothy and bubbly.
  4. Add the salt, sugar, and flour to the bowl, and whisk to combine well.
  5. Drop two spoonfuls of batter onto the prepared baking sheet, spacing them a few inches apart. Use the back of a spoon to spread each one into a thin circle about 3 inches in diameter.
  6. Bake for approximately 5 minutes or until the edges are browned and the center is set.
  7. Immediately upon removing from the oven, use a spatula to work under the edge of the cookie to release it from the parchment.  The cookie will be hot. Use caution! But it's necessary to shape the cookies immediately, before they cool and harden.

  8. Lay the cookie on your workspace and place the fortune in the center of the cookie.
  9. Fold the edges over to conceal the fortune in the center.
  10. Drape the folded cookie over the rim of a glass or the lip of a cup to create the signature crease.
  11. Then immediately place the folded cookie into the cavity of a cupcake pan to hold the shape while it cools.
  12. Repeat with the remaining batter. Only bake 2 cookies at a time to ensure they are folded and shaped before cooling.
  13. Melt the chocolate and drizzle it over the cooled fortune cookies, if desired. Top with sprinkles for a fun finishing touch.
