Let’s Talk Ingredients (and a Little Reality)

News flash: The croissants you find at your average American grocery store are not the same as those fresh-from-the-boulangerie beauties in France. (Shocking, I know.)

An assortment of ingredients on a countertop: croissants, cream cheese packets, a bowl of raspberries and blueberries, a bowl of sugar, eggs, cream, an orange, vanilla extract, and a measuring spoon with salt.

But here’s the thing—they’re absolutely perfect for this Croissant Berry Breakfast Casserole. The slightly drier, more structured ones you’ll find at Costco or the grocery store actually soak up that creamy custard and all the juicy berry goodness like little breakfast sponges.

So grab a pack and don’t look back.

🍓 Berries: This is definitely a spring or summer kind of bake, and fresh berries shine here. But if you’re deep in winter and frozen is all you’ve got—go for it! Just know that frozen berries may release more moisture, which means a slightly softer casserole. Still delicious, just a bit less firm. (And no one’s complaining.)

🥛 Cream cheese: For my lovely European readers, think Kiri or another soft, spreadable cheese—not the aged stuff.

🔄 Berry swaps: You can absolutely use strawberries, blackberries, or whatever combo you love. Just make sure to slice larger berries like strawberries so they layer nicely and don’t turn into fruit chunks. I use a little strawberry slicer that makes the job ridiculously quick.

Berry Bake FAQs

Can I make this casserole the night before?

Absolutely! In fact, letting it soak overnight in the fridge gives those croissants even more time to absorb the custard. Just cover it well and pop it in the oven the next morning—your future self will thank you.

Can I use frozen berries instead of fresh?

Yep! Just know that frozen berries will release more liquid as they bake, so your casserole will be a little softer (think more pudding-y, less crisp edges). Still tasty, still brunch-worthy.

What size baking dish should I use?

A standard 9×13 inch dish works perfectly. Anything smaller and you might have a custard overflow situation—which sounds fun until you’re scraping baked-on cream cheese out of your oven.

Can I use different berries or fruit?

Definitely. Blackberries, strawberries (sliced), or even a mix will work beautifully. You could even get wild and toss in some chopped peaches or cherries if that’s what you have on hand.

How long does it keep?

This casserole keeps well in the fridge for up to 3 days. Just reheat individual slices in the microwave or warm up the whole dish in the oven if you’re serving leftovers to a crowd.

Do I really need to toast the croissants first?

Yes! That quick bake dries them out just enough to hold up to the custard without getting too soggy. It’s a little step that makes a big difference.

Can I eat this straight from the pan in my pajamas?

Absolutely. In fact, it’s strongly encouraged. Bonus points if you’re standing at the counter with a fork and pretending you’re just “evening out the edges.”

Ingredients

New Group Casserole Ingredients:

  • 6 -7 large bakery croissants (about 10 cups)
  • 2 cups fresh raspberries
  • 2 cups fresh blueberries
  • 12 oz cream cheese (room temp)
  • 1 cup + 2 Tbsp sugar
  • 5 eggs (room temp)
  • 1 ¾ cup heavy cream (room temp)
  • 1 Tbsp vanilla extract
  • 1.5 Tbsp juice from orange
  • 1 tsp orange zest
  • ¼ tsp salt

New Group Glaze Ingredients:

  • 2 Tbsp butter
  • ½ cup powdered sugar
  • ½ tsp vanilla extract
  • 2 Tbsp heavy cream

Instructions

1. Prep the Croissants🥐

  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • Cut 6 to 7 large bakery croissants (about 10 cups) into bite-sized pieces. Spread them out on a baking sheet and bake for 9 minutes until slightly crisp. Let them cool for about 5 minutes.

2. Make the Custard

In a large mixing bowl (a stand mixer is perfect for this), beat together:

  • 12 oz cream cheese (room temperature)
  • 1 cup + 2 tablespoons sugar

Once smooth, mix in:

  • 5 room-temperature eggs
  • 1¾ cups heavy cream
  • 1 tablespoon vanilla extract
  • 1½ tablespoons fresh orange juice
  • 1 teaspoon orange zest
  • ¼ teaspoon salt

Mix until fully combined and creamy.

3. Layer the Bake 🍓

Layer half of the toasted croissant pieces into the bottom of your prepared baking dish. Sprinkle on 1 cup fresh raspberries and 1 cup fresh blueberries.

Drizzle half the custard over that layer.

Repeat with the remaining croissants, berries (1 more cup of raspberries + 1 more cup of blueberries), and finish with the rest of the custard.

Gently press everything down to help those croissants soak it all up.

4. Let It Soak (or Chill Overnight) ⏳

Let the assembled casserole sit at room temperature for 20–30 minutes so the croissants can absorb all that custardy goodness.

Planning ahead? You can also cover it tightly and refrigerate overnight. Just pull it out while your oven preheats in the morning.

5. Bake 🔥

Cover the casserole with foil and bake at 350°F for 45 minutes.

After 30 minutes, remove the foil to let the top turn golden and just a little crisp.

6. Make the Glaze

While the casserole bakes, melt 2 tablespoons butter and whisk together:

Melted butter

½ cup powdered sugar

½ teaspoon vanilla extract

2 tablespoons heavy cream

Mix until smooth and pourable.

7. Glaze and Serve ✨

Drizzle the glaze over the warm casserole, serve it up, and prepare for compliments. Lots of them.
