  • 13×9-inch baking dish
  • Foil or parchment paper
  • Non-stick spray
  • Food processor or Ziploc bag and a rolling pin

Ingredients:

For the crust:

  • 2 sleeves of graham crackers, crushed to make graham cracker crumbs
  • ¼ cup sugar
  • ½ cup unsalted butter, melted

For the cheesecake:

  • 16 oz cream cheese, softened
  • ¾ cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract

For the pecan pie topping:

  • 1 cup brown sugar
  • ½ cup light corn syrup
  • ½ cup heavy whipping cream
  • ¼ cup unsalted butter
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups chopped pecan pieces

Step by Step Instructions

1. Preheat the oven to 350 degrees. Line a 13×9-inch baking dish with foil or parchment paper, allowing the edges to hang over the sides for easy removal. Spray with non-stick spray. Set it aside.

2. To make the crust: Crush graham crackers to fine crumbs in a food processor or by placing them in a Ziploc bag and using a rolling pin.

Pour the crushed graham crackers into a medium-sized mixing bowl and combine them with the sugar and melted butter. Stir until the mixture resembles wet sand. Press the mixture into the bottom of the prepared pan. Set it aside.

3. To make the cheesecake layer: In the bowl of a stand mixer, combine the softened cream cheese and sugar. Cream until smooth. Add in the eggs and vanilla. Mix until thoroughly combined, scraping the sides of the bowl if needed.

Pour the cheesecake mixture over the graham cracker crust base. Set it aside.
