Ranger cookies are the go-to cookie recipe in our house.
So much more tasty and hearty than a simple chocolate chip cookie, these complex, golden, little beauties are our family’s favorite.

My research about why they’re called Ranger cookies didn’t come up with more anything than speculations about maybe coming from Texas and being named after the Texas Rangers.
Honestly, I really don’t care where they come from, they’re amazing.
Made with oats, crispy rice cereal (like Rice Krispies), walnuts, coconut, and of course, chocolate chips, these cookies are hearty and delicious.
Some recipes I found omit one of the ingredients. I decided the more the merrier, so I adjusted the recipe so I could have it all.
You can substitute the margarine for butter but I’d recommend sticking with the margarine. It will make your cookie bigger and softer on the inside.
Butter will flatten your cookies and make them more crispy.
I guess you can try both and see which one you like better. (If you do please send me a dozen so I can try ’em out too)

Can I freeze Ranger Cookie dough?
Absolutely. After portioning the dough into balls, place them on a baking sheet to freeze until solid. Then, transfer the frozen dough balls to a freezer-safe bag or container. When ready to bake, you can bake them from frozen; just add a couple of extra minutes to the baking time.
Can I substitute margarine for butter?
Butter will give the cookies a richer flavor and slightly crispier edges. Just keep in mind that margarine has a higher water content, so swapping it for butter may make the cookies spread a bit more. If you want to maintain a thicker cookie, you can chill the dough before baking.
Chocolate Chip Ranger Cookies
Ingredients
- 1 cup melted margarine (2 sticks)
- 1 cup white sugar
- 1 cup brown sugar
- 1 tsp vanilla
- 2 eggs
- 2 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 2 cups quick oats
- 1 cup Rice Krispies
- 1/2 cup shredded coconut
- 1 cup chopped walnuts
- 2 cups chocolate chips (or 1 12oz package)
Instructions

Pre-heat oven to 350°

Mix all ingredients.

Add by spoonful on greased cookie sheet.

Bake for 12-15 minutes.
Recipe Notes
This recipe makes a whole bunch. About 4 dozen. But only if you can keep the wild hooligans out of the dough. If you loose the battle with the hooligans you may be down to 3 dozen. It’s an easy recipe to cut in half if needed.
