Ingredients

  • 36 individual pre-made tart crusts
  • For the filling -
  • Β½ cup lemon juice
  • 1 Tbsp lemon zest
  • 1 cup sugar
  • 3 eggs
  • β…“ cup sour cream
  • Additional lemon zest to garnish

Instructions

  1. Preheat the oven to 375 degrees.Β  Line a baking sheet with parchment and line out the pre-made tart shells.
  2. In a medium bowl, combine the lemon juice, zest, sugar, eggs and sour cream.Β  Mix until combined.Β Β 
  3. Transfer the filling to a measuring cup with a pour spout (or similar) and carefully fill each tart shell just below the top edge.Β 
  4. Bake in the preheated oven for 20-24 minutes or until the filling is set.Β Β 
  5. Allow to cool.Β
