Mini Lemon Tarts Recipe
Ingredients
- 36 individual pre-made tart crusts
- For the filling -
- Β½ cup lemon juice
- 1 Tbsp lemon zest
- 1 cup sugar
- 3 eggs
- β cup sour cream
- Additional lemon zest to garnish
Instructions
- Preheat the oven to 375 degrees.Β Line a baking sheet with parchment and line out the pre-made tart shells.
- In a medium bowl, combine the lemon juice, zest, sugar, eggs and sour cream.Β Mix until combined.Β Β
- Transfer the filling to a measuring cup with a pour spout (or similar) and carefully fill each tart shell just below the top edge.Β
- Bake in the preheated oven for 20-24 minutes or until the filling is set.Β Β
- Allow to cool.Β
- Top with additional lemon zest to garnish.
