Ingredients

New Group for the Cupcakes

  • 1 box vanilla (or white) cake mix
  • 3 eggs
  • ΒΌ c oil
  • 1 cup orange soda
  • 6 Tbsp orange flavored jello mix

New Group for the Frosting

  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 3 Tbsp orange soda
  • 2 Tbsp orange jello mix

Instructions

  1. Preheat the oven to 350 degrees.Β  Place paper liners in a standard muffin tin, set aside.Β 
  2. In the bowl of a stand mixer, combine the cake mix, jello mix, eggs, oil, and soda.Β  Mix on low speed until combined and then bump up the speed to medium and continue to mix for an additional 1-2 minutes until thoroughly combined.Β  Scrape down the sides often.Β 
  3. Pour the batter into the prepared tin(s).Β  Fill each liner about Β½-β…” full.Β Β 
  4. Bake in the preheated oven for 14-16 minutes or until the edges are golden brown and the center is set.Β  Allow to cool completely before decorating.Β 
  5. For the frosting - in the bowl of a stand mixer, combine the softened butter, powdered sugar, jello mix, and orange soda.Β Β 
  6. Mix on low speed until combined.Β  Bump up the speed to medium and mix until light and fluffy looking.Β  Scrape down the sides often.Β 
  7. Transfer the frosting to a piping bag fitted with a large star tip.Β 
  8. Once the cupcakes are cool, pipe a large mound of frosting on each cupcake.Β Β 
  9. If desired, cut paper straws into thirds and insert into the frosting.
